Chef David Garay imagined a new menu just for today inspired by the flavors of the Iberian Coast.

This menu celebrates summer through seafood, fire, citrus, olive oil and seasonal produce while blending in subtle contemporary influence.

1ST COURSE

salt cod croquette

yuzu-saffron aioli. lemon. chive.

a quick + crunchy bite to start the night

2ND COURSE

hamachi crudo

green strawberry. cucumber. pickled fresno. sherry vinaigrette. basil oil.  

cool + refreshing white fish with a little heat

3RD COURSE

golden tomato gazpacho

jumbo lump crab. compressed cantaloupe. basil oil.

Silky + bright, served chilled with a balanced sweetness

4TH COURSE

seared scallop

almond romesco. charred corn. grilled baby leek. smoked chili oil. 

plump scallops over smoky red sauce and tender leeks

5th COURSE

cava granita

green apple. mint. lime.

a sweet refreshing palate cleanser

6th COURSE

iberico pork

charred summer squash. confit cherry tomatoes. crispy fingerlings. black garlic-sherry jus.

A tender cut of a high grade pork with a smoky finish

7th COURSE

cava-poached peach

olive oil sorbet. lemon thyme. sea salt.

a pre-dessert to shift gears.

8th COURSE

Basque Cheesecake

roasted apricot. cardamom honey. almond crumble.

a creamy and crisp finish to a perfect night.
